I’m feelin’ kinda Sunday, Sunday…
Woke up in Lantana, Texas with Claudia at her brother’s house. Had a great breakfast with my fritata, USANA Chelated Mineral, USANA Anitoxidant and good home brewed coffee around 8:45am.
Claudia and I set out for home around 1030am. We stopped for more coffee at the Cabela’s exit north of Ft. Worth then headed south and made a stop at the last Albertson’s before leaving Cow Town.
We stocked up on fruit and veggies for lunch. Apricots, blueberries, rasberries, brocolli, carrots, cauliflower, cucumbers and some incredible black pepper smoked turkey breast sliced thin from the deli.
The sleeping bug bit me around 1230pm and I snoozed straight through Waco and didn’t wake until Georgetown. We got home around 3:45pm and was greeted by the greatest dogs in the world.
After an hour or so we headed to HEB to deal with the people and gather our weekly groceries - more chicken, more chick peas, more green beans, a little Rainbow Chard (interesting).
I prepared seared Tuna, sauted Rainbow Chard and I had a spinach salad with Asian vinaigrette.
A great day of nutrition… OH! I forgot. I made homemade butternut squash soup and Claudia used our Christmas gift from a client of Claudia’s - an immersion blender! I highly recommend picking one up. Very easy to use in your soup making pot with little or no mess.
I hope I am inspiring someone out there! Let me know! Thanks for reading!
